I love turtle chocolates and saw that this holiday season there is a flavor of them that has brownies in it. I thought since they combined brownie into the chocolates, why wouldn’t I make brownies and top them with all the caramel, pecan toppings I could find to make a Turtle Brownie of my own.
These brownies are delicious! The chocolate chip, pecan, caramel topping is perfect on top of these chocolate, fudgy brownies. Putting them together is simple and quick, but they look decadent and are sure to make people swoon over their ooey gooey look. These would be great as part of a Christmas goodie tray and perfect to bring to a potluck over the holiday season.
3 cups chocolate chips, divided (I use PC Semi-Sweet chips)
½ cup butter, cut into pieces
3 large eggs
1¼ cups flour
1 cup sugar
¼ teaspoon baking soda
1 teaspoon vanilla
1 cup chopped pecans
1 tablespoon heavy cream
Spray a 9 x 13 inch pan with non stick cooking spray or line with parchment paper. Heat oven to 350 degrees.
Melt 1½ cups chocolate chips and butter in a large bowl in the microwave. Stir until smooth. Stir in eggs, then add in flour, sugar, baking soda and vanilla. Stir together well. Spread batter into the greased pan, then sprinkle with chocolate chips and chopped nuts. Press them in lightly so they are not loose on top.
Bake for 20 to 25 minutes. Microwave caramels and cream in a small bowl for about 1 minute. Stir and then continue to microwave, stirring every 15 seconds until all is melted and smooth. Drizzle over warm brownies.
