Summer weather has arrived in Nova Scotia (we had a late, rainy start) and I’ve been looking forward to this season all year!
I am a summer loving, heat soaking sponge. I’m not saying I don’t get too hot, or don’t need a dip in an air conditioned place or (80 degree) pool on a hot day, but I am so happy that I can stop carrying a sweater around with me everywhere!
So on the weekend, with the heat already rising by breakfast time, we created a perfect summer breakfast smoothie.
It has greek yogurt, flax seeds, strawberries and bananas – so, that means it’s jam packed with omega-3’s, dairy goodness and fruit that will fill you up and hold you over ‘til lunch time.
This smoothie was thick because I had the fruit already frozen which meant I didn’t need to add ice that would thin it out a bit. If you prefer a thinner smoothie, just keep your fruit fresh or add ice.
For those of you always looking to sneak veggies into meals – you could easily add carrots or tomatoes to this without them ever being noticed because of the strong strawberry banana taste.
Just know that that John would not approve…”Keep fruit smoothies – fruity, don’t mix fruits and veggies – then it’s not a fruit smoothie anymore.”
Oh John, what you don’t know won’t hurt you.
We sat in the grass and enjoyed these on a slow moving Sunday morning – they were fantastic!
Strawberry Banana Breakfast Smoothie
1 ½ frozen bananas
1 cup frozen strawberries
½ cup Greek yogurt (I used honey flavour)
2 tsp Maple Flax Seeds (I use Omega Crunch brand)
¾ cup milk
Blend all ingredients in a blender or food processor. If your blender is like mine, you might spend more time jostling the frozen fruit to towards the blade, than it spends blending, but it’s all worth it!
Pour and enjoy!
